Return demo during the Training on meat processing and food safety awareness.
PROPERIDAD, Agusan del Sur – Participants here are ecstatic. After undergoing the three-day training on meat processing and food safety awareness last September 26-28, 2018, they have gained the knowledge and skills that will be useful in putting up their own food business in the future.
A total of 27 participants composed mostly of farmers and agricultural extension workers (AEWs) attended the said training which was held at the Provincial Veterinary Office in Patin-ay, Prosperidad.
Through the training, the participants were able to understand and apply the principles of meat hygiene and sanitation, discuss the basic concepts and processes involved in meat processing, know the importance of food safety and conduct hands-on demonstration on how to prepare Vigan longganisa, Hungarian sausage, Chicken cordon bleu and Jalapeño sausage. After the cooking demo, they presented their processed meats and it was tasted to measure if they can pass the level of marketable products in the aspect of palatability. Moreover, they were able to learn how to compute the costs of inputs and the possible profit for the particular meat they processed. (with report from Florita Lozada)
